When I saw the idea for a puffed pancake on Pinterest, I got so excited and immediatly printed out a breakfast card for my mom, hoping that it would be her first pick without a doubt. To my contentment, she did. It is honestly the easiest, most delicious pancake. It is fluffy and light, the perfect start to a lazy Sunday.
Makes 2 pancakes
- 2 eggs
- 1/2 cup milk
- 1/2 cup flour
- dash of salt
- dash of cinnamon
Preheat the oven to 425 degrees. Meanwhile, whisk together the eggs, milk, flour, salt and cinnamon in a bowl. Put a small pat of butter into two cake pans, pie pans, skillet, or anything similar and put them into the oven so the butter can melt. You can do this while you wait for the oven to preheat also if you wish. After the butter is melted, spread the melted butter around with a spatula and pour the batter into both of the pans. Bake for 10-12 minutes or until the pancake is firm and has puffed around the edges. Serve hot with honey, fresh fruit, or syrup. Ta-dah!
